Because it takes so darned much time to wash and prepare fresh fruits and veggies. And yet I cannot bring myself to purchase a prepared veggie tray to keep in the fridge. That seems the height of decadence to me somehow.
Several days ago I purchased 4 large zucchini, a stalk of celery, some real-live unpeeled carrots, and 4 assorted peppers. And a cataloupe. They sat and sat. Every time I opened the fridge, I sighed. It exhausted me to even think about preparing them for consumption. But finally yesterday I got everything out of the fridge and went to work. I swear to God, I think it took me an hour and a half, at least, to clean everything up and put it in the fridge on display for the masses. The cantaloupe tasted great. The celery and carrots immediately started flying off the shelf, and the zucchini is now in the form of 4 loaves of zucchini bread. I even made an apple pie for dinner last night with the Jonathans and Honey Crisps I had purchased.
I can’t argue with the fact that this stuff tastes good and is good for me. Or with the fact that the kids often do choose the healthy snacks to eat if I make it easy for everyone to grab some and go.
But it’s such a pain! For those of you who believe in a greater intelligence having organized the universe (i.e., for those of you who believe in God), don’t you think this could all have been avoided by more careful planning?

Hmmmm, I just don’t mind doing it. It never takes me that long, however. Silly question here, but do you have a really good knife? That makes life so much easier.
I try to keep carrots, red pepper strips, broccoli, cauliflower, and zucchini in the fridge for grabbing or dipping in hummus.
